週末輕鬆煮》涼拌芒果

「涼拌芒果」以時令芒果入菜,紅暈果皮有著細緻口感與清甜芒果香氣,和辣椒等其他食材拌勻,微辣酸甜十足夏日風味,現拌現吃,作為炸物配菜也是相當解膩!

食材部分,保師傅建議買小的青辣椒,其辣度較高(不要使用青龍椒);蕃茄切丁後用可用少許鹽巴先醃過;建議要享用時再混合拌勻,以免放久出水,影響風味。

份量| 4人份

材料|

愛文芒果/去皮切丁 3粒

紅辣椒/去籽切末 3條

青辣椒/去籽切末 4條

香菜/切末 40g

大蒜/切末 5粒

蕃茄/切丁 2粒

調味料

鹽 少許

特級橄欖油 1大匙

黑胡椒 少許

檸檬/取汁 1大匙

做法|

依序加入芒果、辣椒、香菜、蒜末、鹽、特級橄欖油、黑胡椒、與檸檬汁拌勻後,再加入蕃茄 (勿倒入蕃茄汁水)拌勻即完成。
